Elongated or ovoid Chinese cabbages, otherwise known as Pai-Tsai, originating in northern China, can only be grown in lowland tropical conditions during the cool season. Some of these varieties are photoperiod dependent. Our Pai-Tsai varieties, however, have been selected for their good independence from day length and are therefore quite adaptable. However, it is best to avoid growing them at temperatures above 35°C. Green Pak Choi is a type of small Chinese cabbage with green ribs. Harvested for its leaves, it resembles Swiss chard. It can be eaten raw in salads or cooked as a side dish or soup.
